The easy answer is yes, that's what they were normally built with, but it depends on a few things.
Can you find a pedal assembly ? What tranny are you using ? What is your fabrication skill level ? Do you have a build manual ?

Yes I have the assembly manual, but I didn’t find the listing for the pedals assembly. I have located a mustang ii pedals assembly. Small block Ford and T5. Is it just the one assembly manual or are there additional publications?

There's kinda only one big manual. There is an early and a later one that includes the MX. About 3/4" thick. The pedal assembly is in section 3.
